Ruinart (roo-ee-NAHR) Blanc de Blancs Brut Champagne, France NV

I adore blanc de blancs (made from 100% Chardonnay), and this is one of the classic producers.  The scents of fresh cream and biscuits and lacy-racy acidity make it great with brunch fare–smoked salmon, eggs Benedict or a goat cheese omelet.
